Newly renovated, Marco Wiles restaurant is still the most exciting place to eat in Houston. The food is daring-with specials like house-made headcheese, its rich jellied coolness set against the tart pop of heirloom-potato salad. And its simple, with the eloquent perfection of a single ravioli with and egg inside. Seafood from whole branzino to sea urchin, is handled with great sensitivity, and the meats (smoky lamb chops scottadito, charred filet with foie gras) acquire depth and texture in the wood-burning oven.
